To increase the value and quality of the dishes, she uses local products with a special eye for the mountain dairies in the surroundings. The menus turn into a display of traditional specialities, real points of excellence like carpaccio and lard with truffled polenta, strangolapreti, deer and shin with potatoes and sauerkraut.
