Upon their arrival, many guests are struck by the restaurant's beautiful garden and parking area, with its shady, age-old trees. Furthermore, once inside, they are thrilled to find a pleasant environment, with relaxing decorations in pastel shades. The restaurant is easy to reach from the road that borders the Castle of Rovereto and takes travellers to the nearby Eremo di San Colombano. Moreover, it has a menu that varies on a daily basis, in addition to a selection of a-la-carte dishes that are at the basis of its success. Ristorante San Colombano is a valid point of reference if you want to taste traditional dishes from the area whose original recipes have remained unaltered. Furthermore, it has always been very focused on customer needs. Its wine list has been skilfully prepared, with special care being taken over regional products, and contains wide array of Trentino grappas as well.

The restaurant is a family affair. Ristorante San Colombano is managed by the brothers Maurizio and Giorgio Venco, who have divided all the tasks up among themselves in an enviable manner. Maurizio is an expert sommelier. He can be found in the dining room, where he enjoys the irreplaceable support of his wife Renata and their son, Alessio. Giorgio is the king of the kitchen instead. He studied as a chef and directs the staff which, unsurprisingly, includes the indispensable help of his wife Daniela and his son Mattia.
